Lettuce has long been a staple salad ingredient throughout New Zealand and is very easy to grow from seed. Pick from varieties such as the Iceberg, Cos Lettuce or even Red and Green varieties, there are plenty to choose from to suit your needs. Avoid sowing in the hottest and coldest months of the year, try sowing in short rows every fortnight to ensure continuity of cropping. Lettuce is ready to harvest when a firm heart has formed; the exception to this is the loose-leaf varieties where leaves are harvested as and when needed. It is best to cut in the morning when the plants will be at their freshest.
